Directions

    Soak 1 cup of long grain rice in 1.5 cups of water for about 20 minutes.

    Fry 1 small chopped onion in 2 tablespoons of olive oil until translucent.

    Add 2 cloves of minced garlic to the pan and sauté for a few minutes.

    Add the soaked rice to the pan and stir.

    Add 1 cup of chicken stock and stir, scraping down the sides of the pot.

    Bring the mixture to a boil and cover.

  7. 7.

    Simmer for 12-15 minutes.

    After simmering, turn off heat completely.

    Cover with a kitchen towel for 10-15 minutes to let the moisture evaporate.

    Add 1 handful of chopped parsley and 1 handful of chopped dill.

    Add 2 tablespoons of fresh lemon juice and 1 tablespoon of lemon zest.

    Season with salt and pepper to taste.
