Directions

    In a bowl, mix chopped onion, green pepper, eggs, tomato juice, salt, and pepper.

    In a large bowl, combine hamburger meat with the tomato juice mixture and mix with your hands.

    Add crushed crackers and oats to the meat mixture and mix until well combined.

    Pour some tomato juice into a large baking pan to coat the bottom.

    Spread the meat mixture evenly into the pan.

  6. 6.

    Pour tomato juice over the meatloaf.

  7. 7.

    Bake at 400°F for 30 minutes, then reduce the temperature to 350°F and bake for an additional 45 minutes.

    Remove from oven, let it drain for a minute, and then spread ketchup over the top.

    Slice and serve.
