Directions

    Split chicken breasts in half and season with avocado oil and plenty of seasoning. Sear in a hot skillet until browned, then baste with butter.

    In the same skillet, sauté onions and garlic in butter until fragrant. Add flour, then deglaze with chicken broth and add heavy cream.

    Stir in mozzarella, pepper jack, and parmesan cheese. Once melted, add cooked rigatoni pasta.

    Add spinach, more seasoning, and broccoli to the sauce. Mix well.

    Add the cooked and diced chicken to the pasta mixture and stir.

    Transfer everything into a baking dish, top with more chicken and cheese, and bake at 375°F (190°C) for 25 minutes until golden brown.
