    Preheat oven to 350°F. Spray a 13-by-9-inch casserole dish with cooking spray.

    In a skillet, heat the olive oil over medium heat. Add the onion and cook for 1 to 2 minutes, stirring.

    Remove the onions from the pan and add the squash, salt, pepper, and butter. Cook for 7 to 8 minutes, until the squash has softened.

    Remove the squash from the heat and add the Cheddar and Parmesan cheeses, and the sour cream. Mix well.

    Pour the mixture into the prepared casserole dish.

    Top with the crushed Ritz crackers.
