1In a bowl, mix together 2 teaspoons of Dijon, 1/4 cup of red wine vinegar, 1/2 teaspoon of salt and pepper, 1/4 cup of Parmesan cheese, and 1/2 cup of extra virgin olive oil.
2Add 1/4 pound of Boar's Head Bianco D'Oro Italian dry salami (sliced).
3Add 1 1/2 cans of chickpeas, 1 head of romaine lettuce, and 1/4 pound of shredded mozzarella.
4Mix all ingredients together.
5Finish with extra Parmesan and pepper.
