Directions

    Cut the prawns halfway through.

    Make the batter: 2tbsps potato starch, 1tbsp flour, 1 egg, 1tbsp oil. Mix well.

    Make the sauce: 4tbsps white vinegar, 3tbsps sugar, 2tbsps jam, few drops of lemon water, salt, 5tbsps water. Mix well.

    Coat the prawns with batter and fry them in hot oil for 3 minutes. Take them out.

    Heat the oil again, and fry the prawns for another 30 seconds to make them extra crispy.

    In a hot pan with cold oil, add the sauce and reduce it until it becomes sticky. Turn off the heat.

    Add the lychees to the sauce.

    Add the fried prawns to the sauce and mix.

    Turn the heat back on and coat everything evenly with the sauce.
