Directions

    Tear your cauliflower into florets.

    Dice your onions and potatoes.

  3. 3.

    Melt some butter in oil and sweat everything down with some garlic and thyme.

    Add your stock and cream.

  5. 5.

    Simmer for a bit, then blend until beautifully creamy and velvety smooth.

    Ladle the soup into bowls, top with the cauli pieces, chopped chives, a swirl of cream and chilli oil.

  • 1 large cauliflower
  • 1 white onion
  • 1 medium potato
  • 1 tbsp butter
  • 4 garlic cloves
  • 1 tbsp fresh thyme
  • 1 l vegetable stock
  • 250 ml cream
  • 2 tbsp nutritional yeast
  • chives
  • chilli oil
  • 1 tbsp olive oil
  • salt
  • pepper
