Directions

    Peel and roughly slice Maris Pipers or Yukon Gold potatoes into about half-centimeter thickness.

    In a pan, combine cream, cloves, peppercorns, sage, and nutmeg.

    Reduce the cream mixture and sieve it to remove solids.

  4. 4.

    Add the potatoes to the cream mixture.

  5. 5.

    Add confit garlic or sliced garlic to the mixture.

  6. 6.

    Pour the mixture into a baking dish, cover with parchment paper, and bake at 150°C for 45 minutes.

    Remove parchment paper, add brie and sage leaves on top, and bake for another 40 minutes until golden and bubbly.
