Directions

    Slice zucchini using a mandoline.

    Add grape seed oil to a skillet and heat until it is at frying temperature.

    Fry zucchini slices in batches until golden brown.

    Season pasta water and cook spaghetti.

  5. 5.

    Add the fried zucchini slices back to the skillet, which should be wiped clean.

    Add two laddlefuls of pasta water to the skillet and heat.

    Add the cooked spaghetti to the skillet with the zucchini and water, and cook until the liquid is absorbed.

    Add a pat of butter and mix.

    Add two handfuls of grated Parmesan cheese, some freshly grated black pepper, and mix.

    Carefully lift the pasta into a bowl.

    Garnish with more Parmesan cheese and basil.
