1To make the marinade, combine some white onions, a bunch of garlic cloves, a handful of cilantro, one can of chipotle peppers, some fresh lime juice and orange juice.
2Season everything with chili powder, cumin, oregano, black pepper and honey before blending everything together.
3Take about 40 ounces of lean steak, poke some holes in it, then put the steak in a bag with the marinade and let it sit for at least 30 minutes, but I recommend overnight for max flavor.
4When the steak is done marinating, cook it on high heat, let it rest for a few minutes and then dice it into small pieces.
5Assemble with a low calorie tortilla, some fat free mozzarella, carne asada, diced onions and cilantro.
6Toast quesadillas until they're golden brown on both sides and if you're meal prepping, just wrap them in aluminum foil and store them in the freezer for up to three months.
