Directions

    Wash ginger thoroughly and chop it roughly.

    Blend the chopped ginger with 4 cups of water until smooth.

    Pour the mixture into a pot and bring to a boil. Cook for 10 minutes until reduced.

    Strain the mixture multiple times using a sieve.

  5. 5.

    Add ½ cup of agave nectar and the juice of two lemons to the strained mixture.

    Taste and adjust sweetness and lemoniness as needed.

    Add ice to a glass.

    Pour the ginger mixture over the ice.

    Add sparkling water to taste.
