Directions

    Cut chicken thigh into 1" pieces and marinate with soy sauce, ginger, garlic, white pepper, and shaoxing wine for at least 30 minutes or up to overnight.

    Before frying, add an egg white and mix through.

    Use coarse sweet potato flour and pack the chicken well.

  4. 4.

    Fry chicken at 350F for 3-4 minutes.

    Add fresh basil and fry for 30 seconds.

    Drain chicken and basil.

    Mix together your seasoning and sprinkle it on while the chicken is piping hot.
