Directions

    Peel and chop the potatoes.

    In a pot, brown 1 pound of ground beef. Drain and set aside.

    Add 1 cup of chopped onions, celery, and bell pepper mix to the pot and sauté.

    Deglaze the pot with a little bit of homemade beef broth.

    Add the rest of the beef broth, 1 can of fire roasted tomatoes, and 1 can of tomato sauce.

    Add 1 bag of steamed mixed vegetables and the chopped potatoes.

    Season with salt, bay leaf, garlic powder, dried thyme, and hot sauce. Mix well.

    Add a dash of sugar to balance the acidity.

    Stir in the cooked ground beef.

    Let the soup simmer for about 30 minutes, or until thickened.

    Remove the bay leaf before serving.
