Directions

    Season the chicken breasts with paprika and other seasoning.

    Cook the chicken breasts in a cast iron skillet with olive oil until golden brown on both sides.

    Let the chicken cool down and cut it into bite-sized pieces.

    Cut the avocados in half, remove the pit and scoop out the flesh.

    Mix the avocado with corn, red onion, green bell pepper, tomato, feta cheese, salt, pepper and lime juice.

    Mash the mixture with a bench knife.

    In a bowl, layer the rice, the lettuce, the avocado mixture and the cooked chicken.

    Drizzle with low cal chipotle sauce and serve.
