Directions

    Cut the onion thinly.

    Rough chop the garlic.

    Cut the chuck roast into cubes.

    Season the beef with salt and sear in batches in a pot with some oil over medium heat.

    Add the onions to the same pot and cook in low heat for 5 minutes.

    Add the garlic and cook for 2 more minutes.

    Deglaze the pot with 2 cups of water, scraping the pan.

    Add 15 oz of tomato sauce, 1.5 bouillon cubes and 1/4 cup of soy sauce.

    Add the seared beef back to the pot.

    Add 3 bay leaves and simmer for 1.5 hours or pressure cook for 30 minutes.

    Peel and dice 3 potatoes.

    Cut 2 whole carrots into bite-size pieces.

    Once beef is tender, add the potatoes and carrots.

    Add 2 Tbsp of brown or white sugar and simmer for 10-15 minutes.

    Once potatoes are ready, add 2 Tbsp of lemon juice or calamansi juice.
