  2. 2Place 3 tablespoons of sugar in each llanera.
  3. 3Set llanera on the stove over low heat; move repeatedly over flames until sugar is melted and golden.
  4. 4Continuously tilt and swirl to ensure even melting.
  5. 5Remove from heat and let caramel cool and harden.
  6. 6In a bowl, combine egg yolks and condensed milk; stir to combine.
  7. 7Add evaporated milk, gently stirring until blended.
  8. 8Strain the mixture.
  9. 9Pour mixture into prepared llaneras, cover tightly with foil, and arrange in a wide, oven-safe dish with 1 inch of water.
  10. 10Bake for 50-60 minutes or until a toothpick comes out clean.
  11. 11Remove from oven, let cool, and refrigerate.
  12. 12To serve, turn flan over onto a serving plate, caramel on top.

Tips

  • Use cold eggs.
  • Prepare the custard mixture as soon as the eggs are separated.
  • Stir in one direction.
  • Tap the llanera on the counter to release air pockets.
  • If the mixture appears foamy, let it stand.
  • Strain the mixture to remove stray egg whites.
  • Use a water bath.
  • Do not overcook.
  • If llaneras are unavailable, use a round cake or bundt pan, ramekins, or muffin tins. Cook caramel in a saucepan and pour into baking dish of choice.
