Preheat oven to 375 F.

Place 3 tablespoons of sugar in each llanera.

Set llanera on the stove over low heat; move repeatedly over flames until sugar is melted and golden.

Continuously tilt and swirl to ensure even melting.

Remove from heat and let caramel cool and harden.

In a bowl, combine egg yolks and condensed milk; stir to combine.

Add evaporated milk, gently stirring until blended.

Strain the mixture.

Pour mixture into prepared llaneras, cover tightly with foil, and arrange in a wide, oven-safe dish with 1 inch of water.

Bake for 50-60 minutes or until a toothpick comes out clean.

Remove from oven, let cool, and refrigerate.

To serve, turn flan over onto a serving plate, caramel on top.
Ingredients
9 tablespoons sugar
12 egg yolks, from large eggs
1 can (14 ounces) sweetened condensed milk
1 can (12 ounces) evaporated milk
Equipment
3 llanera molds
oven
oven-safe dish
cheesecloth or fine-mesh sieve
tongs
wooden spoon or silicone spatula
heavy-bottomed pan
Tips
Use cold eggs.
Prepare the custard mixture as soon as the eggs are separated.
Stir in one direction.
Tap the llanera on the counter to release air pockets.
If the mixture appears foamy, let it stand.
Strain the mixture to remove stray egg whites.
Use a water bath.
Do not overcook.
If llaneras are unavailable, use a round cake or bundt pan, ramekins, or muffin tins. Cook caramel in a saucepan and pour into baking dish of choice.
