Auntie Anne's Pretzel Bites with Cheese Sauce
Directions
- 1In a mixing bowl, combine 2 cups of warm milk (not hot) and 2 packets of yeast. Mix slightly and let sit for 3 minutes.
- 2Add 6 tablespoons of brown sugar and 4 tablespoons of melted butter. Mix well.
- 3Incorporate 4 1/2 cups of flour and 2 teaspoons of salt gradually, mixing lightly.
- 4Use a KitchenAid mixer with the dough hook for 10 minutes to knead the dough. Alternatively, knead by hand for 10 minutes.
- 5Add a little more flour to the dough if needed, then place it in a warm spot for an hour, covered with plastic wrap, to rise.
- 6Spray your baking sheet with cooking spray.
- 7Shape the risen dough into pretzels and pretzel bites; roll the bites thinly for better expansion.
- 8Boil a couple cups of water with 1/3 cup of baking soda. Briefly immerse each pretzel and pretzel bite into the boiling mixture.
- 9Place the pretzel and pretzel bites on the prepared baking sheet.
- 10Brush the pretzel and pretzel bites with melted butter and sprinkle with coarse salt.
- 11Bake at 450°F for approximately 8 minutes. Check regularly.
- 12Prepare the cheese sauce: In a pan, melt 1 tablespoon of butter, then whisk in 1 tablespoon of flour. Add 1 cup of whole milk, 1 cup of shredded cheddar cheese, and 1/2 teaspoon of salt. Stir until bubbly.
