Directions

    Cut a slab of bacon into 6 inch thick sections.

    Coat the bacon in mustard and your favorite barbecue rub.

    Fire up smoker to 250 degrees.

  4. 4.

    Smoke for 3 to 4 hours or until the bark sets and reaches 175 internal temperature.

    Transfer to an aluminum pan.

  6. 6.

    Add butter on top and drizzle barbecue sauce.

  7. 7.

    Cover in foil and place back on the smoker for another 2-3 hours until the bacon is probe tender (205-210 degrees).

    Let rest and shred the bacon.

    Toss the shredded bacon back into the pan and mix it well with the sauce.

    Pile it on a tortilla with scrambled eggs and cheese.

    Garnish with cilantro.
