Directions

    Put 8 pieces of short rib bones into 12 liters of water. Clean the meat.

    Boil for 20 minutes, then pour out your impurities. Wash the meat.

    Put the clean bones into the broth.

    Add 1 heaping tablespoon of salt, 2 large onions, and a big piece of ginger.

    Boil for 2 hours.

    Add 2 clumps of rock sugar and 1 cup of fish sauce.

    Toast 1 cup of coriander seeds, 8 star anise, 2 black cardamom, 8 cloves, and 1 chunk of cinnamon.

    Add the toasted spices to the broth and simmer for 20 minutes.

    Filter. You should have 8 liters of broth left.
