Directions

    Apply mustard to the chuck roast as a binder.

    Smoke at 225 until the internal temperature reaches 165°F.

    Wrap the chuck roast in foil with butter.

    Return to the smoker and cook until the internal temperature reaches 203°F or when it probes like butter

    Rest for at least an hour in a cooler.
