Start with the marinade by mixing together olive oil, white wine, the juice and zest of a lemon, some garlic cloves, a little salt, pepper, crushed red pepper, and oregano in a bowl.
Cube up the boneless, skinless chicken thighs.
Add the cubed chicken to the marinade and mix to coat.
Cover and marinate for 30 minutes to an hour.
After the chicken is marinated, prepare the coating by mixing Italian seasoned breadcrumbs, regular panko breadcrumbs, parmesan cheese, a little salt, pepper, and garlic powder on a baking sheet.
Toss the marinated chicken in the breadcrumb mixture, ensuring each piece is fully coated.
Pre-soak skewers and then thread the coated chicken onto them.
Give the skewers a light oil spray.
Place the skewers in the air fryer at 390 degrees Fahrenheit for about 12 minutes, flipping them halfway through.
While the chicken cooks, prepare the sauce by melting some butter with garlic in the microwave.
Stir in lemon juice, parsley, salt, and pepper into the melted garlic butter.
Once the chicken skewers are done, drizzle the lemon garlic butter sauce over them.
