Directions

    In the bowl of your stand mixer or a big bowl, add ¾ cup of warm water (100-110°F) (180ml).

    Add a ¼ ounce packet or 7 grams of active dry yeast, not instant yeast.

    Add 1 teaspoon of granulated sugar (honey or brown sugar can be used instead).

    Mix and set aside for 5-7 minutes or until you see a nice foamy head on top.

    Add 2 cups or 240 grams of all-purpose flour (bread flour for chewier pizza or double zero flour for a thinner crispier pizza).

    Add ¾ teaspoon of salt and 2 teaspoons of sugar.

    Add 1 tablespoon of olive oil.

  8. 8.

    Mix on low for about a minute until the dough comes together.

  9. 9.

    Increase speed to medium-low and run the mixer for about 5 minutes or until it comes together in a ball and has some elasticity.

    Add a tablespoon or two of flour if the dough seems too wet, or add a few tablespoons of warm water if the dough seems too dry.

    Lightly flour your countertop and transfer the dough.

    Give it a good stretch and press it away from you, bringing it in and pressing away.

    Lightly oil a large bowl, and transfer the dough to the bowl, turning it a few times so that it's oiled all over.

    Cover the bowl with a damp cloth or plastic and let it sit in a warm place for about an hour until doubled in size.

    Preheat your oven to 450°F.

    Spread the dough onto a baking sheet and form it into a circle.

    Spoon your sauce onto the middle, leaving a little border for the crust. Don't add too much sauce.

    Finish with mozzarella and other favorite toppings.

    Bake at 450°F for 12-15 minutes or until the crust is golden and the cheese is melted and bubbling.
