Potato Soup

Directions

    Start with about eight slices of bacon.

    Once the bacon is done, put it to the side.

    Add three tablespoons of butter and a medium onion.

  4. 4.

    Let this have a good time in the pot.

    Add a big old dollop of garlic.

  6. 6.

    Let that go until it's smelling good.

  7. 7.

    Add flour and cook it long enough so it doesn't taste like flour when you're done.

    Add four cups of unsalted chicken broth, two cups of milk and just under a cup of heavy cream.

    Add salt, pepper and ancho chili powder.

    Add your potatoes in to cook.

    Let it come to a simmer. Stir it periodically so it doesn't stick.

    Cook until potatoes are fork tender.

    If you have an emulsion blender, this is the time to use it. If you don't, mash them up.

    Add a little milk to them so they weren't super thick.

    Put them back in. Add some sour cream.

    Add lots of shredded cheese.

    Add the bacon from earlier.

    Mix it all up, and put whatever toppings you want.
