Directions

    Boil chickpeas with bicarb of soda until soft. Add garlic to the boiling water.

    Drain the chickpeas and add them to a food processor; blend until a paste forms.

  3. 3.

    Add tahini, lemon juice, and garlic to the food processor; blend until smooth.

  4. 4.

    Add ice cubes and blend for a few more minutes until very smooth.

  5. 5.

    Heat lentils in the microwave for 2 minutes.

  6. 6.

    Spread the hummus on a plate.

  7. 7.

    Top with warm lentils, chopped salad (tomatoes, cucumber, red onion, parsley), and a drizzle of EVOO.

    Serve with pita bread.
