Directions

    Boil pasta until al dente.

    Shred mozzarella, Colby Jack, and cheddar cheese.

    In a bowl, combine all three cheeses.

    Divide the cheese mixture into two equal parts.

    In a small container, mix salt, pepper, garlic powder, smoked paprika.

    In a pan, melt 3 tablespoons of butter.

    Add half of the seasoning mixture to the melted butter and stir.

    Add 3 tablespoons of flour to the pan and cook until the flour is no longer raw.

    Add 1 can of evaporated milk and whisk continuously to prevent lumps.

    Add 2 cups of heavy cream, whisk until smooth.

    Add the remaining seasoning mixture and stir.

    Add 1 tablespoon of Dijon mustard.

    Let the sauce thicken.

    Add half of the cheese mixture to the sauce, stir until melted. Repeat with the remaining cheese mixture.

    Add the cooked pasta and stir to combine.

    Layer the macaroni and cheese in a greased baking dish.

    Top with remaining cheese.

    Bake at 350°F for 25-30 minutes, or until the top is melted and bubbly.

    Broil for 1-2 minutes to get a nice crust.
