    Preheat the grill, cube chuck roast and season with salt and pepper.

    Sear the chuck roast in olive oil in the cast iron grill.

    Blend tomatoes, onion, lemon juice, garlic, apple cider vinegar, beef broth, cumin, oregano, and cloves.

    Pour the blended mixture over the seared chuck roast, add bay leaves, and braise for 4 hours.

    Once the chuck roast is tender, shred the meat and separate the consommé.

    Toast bread in a buttered skillet on the grill.

    Build the sandwich with the shredded chuck roast, Colby Jack and mozzarella cheese, and toasted bread.

    Grill the sandwich until the cheese is melted and bubbly.

    Cut the sandwich in half and dip in consommé and cilantro.

  • 1 cilantro
  • 2 tablespoons olive oil
