Directions

    Prepare the meringue: In a bowl, beat egg whites with lemon juice and sugar until stiff peaks form.

    Prepare the pastry cream: In a separate bowl, beat egg yolks with sugar until pale and thick. Add mascarpone cheese and mix. Fold in the whipped egg whites and flour gently.

    Pipe the pastry cream onto a baking sheet lined with parchment paper, forming ladyfingers.

    Bake the ladyfingers in the oven at 180C until golden brown.

    Prepare the cherry sauce: In a pan, combine cherries and sugar, add lemon juice. Cook until the cherries soften and the sugar dissolves. Puree with an immersion blender.

    Prepare the cream filling: Beat egg yolks with sugar until pale and thick. Add mascarpone cheese and mix. Fold in the whipped cream.

    Assemble the tiramisu: Soak ladyfingers in coffee. Layer ladyfingers in a baking dish, spread half of the cream filling on top, then add half of the cherry sauce. Repeat the layers and finish with the rest of the cream filling.

    Top the tiramisu with the remaining cherry sauce and garnish with fresh cherries.

  • 50 g sugar
  • 100 ml coffee
  • 200 ml cream
