Directions

    Peel and grate the potatoes, submerge in cold water for 5 minutes, then strain off.

    Squeeze out as much liquid as possible from the potatoes.

    In a pan with oil, add the potatoes and season with salt, pepper, garlic, thyme, and rosemary.

    Cook on low heat for 20-25 minutes without coloring; just soften them.

    Strain the oil off but keep it to fry later.

    Mix the potatoes with cornflour.

    Shape the potatoes either with your hands or in molds and set in the freezer for 40-45 minutes.

    Fry the potatoes in the oil from earlier at 175°C until golden and crispy.
