Directions

    Season pork chops with salt and pepper.

    Add olive oil to a large pot or Dutch oven and sear the pork chops until golden brown. Remove and set aside.

    Add smoked sausage, chopped onion, and bell pepper to the pot and sauté.

    Add minced garlic and sauté.

    Return the seared pork chops to the pot, along with their drippings.

    Add water, bay leaves and Creole seasoning to the pot.

    Bring to a boil, then reduce heat and simmer for about 1 hour and 30 minutes, adding water as needed.

    Serve over rice with your favorite sides.
