Directions

    Warm 2 cups (480ml) of water to 100°F to 110°F.

    Pour the warm water into a large bowl.

    Add 1 (0.25-ounce/7g) packet of active dry yeast to the bowl.

    Add 1 tablespoon of honey (or sugar) to the bowl and mix well.

    Set aside for about 5 minutes until foamy.

    In a separate bowl, measure out 5 cups (600g) of all-purpose flour.

    Add 1 tablespoon of salt and 1 to 2 tablespoons of your favorite chopped herbs (optional) to the flour.

    Whisk together the dry ingredients.

    Add the dry mixture to the yeast mixture and gently fold together with a spatula.

    Add 9 tablespoons (135ml) of extra-virgin olive oil, divided. Reserve some for greasing and serving.

    Gently turn the dough to coat it evenly with the olive oil.

    Cover and let rise for 2 hours or until doubled in size, or refrigerate overnight.

    Preheat your oven to 450°F.

    Lightly oil your hands and gently stretch the dough into your prepared pans.

    Let the dough rise uncovered for 1 hour.

    Drizzle with olive oil and press down to create dimples.

    Add your desired toppings and bake at 450°F for 20-25 minutes until golden brown.
