Hot Honey Crispy Chicken Caesar Salad & Fries

Directions

    Marinate chicken breast (125g) with 1 tbsp greek yogurt, 1/2 lemon juice, 1/2 tsp dijon mustard, 1/4 tsp minced garlic, a dash of paprika, salt and pepper for 30 mins - 1 hour.

    Coat the marinated chicken in seasoned panko (13-15g panko, 5g parmesan, garlic powder, paprika, salt, pepper).

    Airfry or bake the chicken at 200°C for 15-18 mins (airfryer) or 20-25 mins (oven), flipping halfway.

    Prepare fries: rinse 225-250g of peeled and chopped potatoes until water runs clear. Soak in cold water with baking soda (optional) for 30 mins-1 hour. Pat dry and toss with olive oil (1/2 tsp) and seasoning.

    Airfry fries at 200°C for 15-20 mins, shaking halfway.

    Make caesar dressing: mix 10g light mayo, 25g greek yogurt, 1/4 tsp minced garlic, 1/2 tsp dijon mustard, 1/4 tsp anchovy paste (optional), 1 tbsp ACV vinegar, 1/4 tsp Worcestershire sauce, 1/2 lemon juice, 3-5g parmesan, salt and pepper.

    Toss chopped and washed lettuce (1/2-1 head) with the dressing.

    Assemble the salad: place lettuce in a bowl, top with the cooked chicken, and add the fries.

    Drizzle hot honey (1 tsp honey, 2 tsp hot sauce, dash of chilli flakes) over the chicken.

    Garnish with extra parmesan cheese and enjoy!
