Directions

    Preheat oven to 400 degrees Fahrenheit. Cut the spaghetti squash in half, remove seeds, and place cut side down on a baking sheet.

    Place a portion of boursin cheese in each squash half.

    Add cherry tomatoes to each squash half.

  4. 4.

    Season with salt and pepper.

    Bake until tender (approximately 40 minutes).

    Meanwhile, chop kale, red onion and garlic.

    Slice the sausages.

  8. 8.

    In a pan, sauté the onion and garlic with olive oil until tender.

    Add sausages and cook until browned.

    Add kale and season with salt.

    Cook until kale is wilted.

    Fluff the cooked spaghetti squash.

    Add the sausage and kale mixture to the squash.

    Top with parmesan cheese and pepper.

  • 4 Italian chicken sausages
  • 2 tablespoons rosemary infused extra virgin olive oil
  • 1 handful parmesan cheese
