Directions

    Boil pasta until cooked and set aside.

    Shred mozzarella, Colby Jack, and cheddar cheese.

    In a bowl, mix all the shredded cheeses together. Divide in half.

    In a separate bowl, mix salt, pepper, garlic powder, and smoked paprika.

    In a pan, melt 3 tablespoons of butter over medium heat.

    Add half of the seasoning mix to the melted butter, stir to combine.

    Add 3 tablespoons of flour to the pan and cook until the raw flour smell disappears.

    Add one can of evaporated milk and whisk until smooth, no clumps.

    Add 2 cups of heavy cream and whisk until smooth. Add the remaining seasoning mix and stir.

    Add 1 tablespoon of Dijon mustard and stir.

    Add half of the cheese mixture to the sauce; stir until melted.

    Add the cooked pasta to the cheese sauce; stir to combine.

    Layer the mac and cheese in a baking dish, starting with a layer of pasta and cheese sauce, then topping with the remaining cheese and cheese sauce.

    Bake at 350°F for 25-30 minutes, or until the top is melted and bubbly.

    Broil for 1-2 minutes to get a nice crust. Top with chives.
