1Dice one onion, some baby red potatoes, and a couple of handfuls of fresh spinach.
2Heat some olive oil in a large pot and start to brown 1 pound of Italian sausage. Use a spoon or a meat chopper to break it apart and cook until everything is brown and no longer pink.
3Add in the diced onions and potatoes along with some garlic and seasonings. Season with Italian seasoning, red pepper flakes, salt and pepper.
4Add in one can of diced tomatoes and four to six cups of chicken broth.
5Bring everything to a boil and simmer until the potatoes are cooked through.
6Toss in the chopped spinach along with half a cup of heavy whipping cream until heated through.
7Serve and top with some grated parmesan cheese.
