Easy Italian Sausage and Potato Soup

Directions

    Dice one onion, some baby red potatoes, and a couple of handfuls of fresh spinach.

    Heat some olive oil in a large pot and start to brown 1 pound of Italian sausage. Use a spoon or a meat chopper to break it apart and cook until everything is brown and no longer pink.

    Add in the diced onions and potatoes along with some garlic and seasonings. Season with Italian seasoning, red pepper flakes, salt and pepper.

    Add in one can of diced tomatoes and four to six cups of chicken broth.

    Bring everything to a boil and simmer until the potatoes are cooked through.

    Toss in the chopped spinach along with half a cup of heavy whipping cream until heated through.

    Serve and top with some grated parmesan cheese.
