    Peel the papery part off the summer sausage and cut it into chunks.

    Place the sausage chunks into a baking dish.

    In a bowl, mix together 1/2 cup of apricot preserves and 3 tbsp of Dijon mustard.

    Pour the apricot preserves and Dijon mustard mixture over the sausage, making sure it's in one layer.

    Bake in the oven at 350°F for 45 minutes.

    Once baked, skewer the sausage pieces with toothpicks and place them on a serving dish.
