Directions

    Wash and cut off the ends and sides of russet potatoes.

    Cut potatoes into thin shoe string fries.

  3. 3.

    Place fries in an ice bath for 20-30 minutes.

    Rinse and repeat until the water runs clear.

  5. 5.

    Lay fries out on a rack to dry and pat them dry with paper towels.

    Heat avocado oil in a frying pan.

  7. 7.

    Fry fries until partially cooked.

  8. 8.

    Remove fries and place on a cooling rack.

  9. 9.

    Fry again to crisp.

    Toss with sea salt, parmesan, parsley, and butter.
