Directions

    Boil water, add salt, and cook cavatappi pasta for 8 minutes if making mac and cheese right away, or 7 minutes if preparing it the night before.

    Shred mozzarella, Colby jack, and cheddar cheese.

    In a small container, mix seasonings: salt, pepper, garlic powder, and paprika.

    In a pan on medium heat, melt butter and add half of the seasoning mix to bloom it for 30 seconds.

    Add 3 tablespoons of flour to make a roux and cook for 2-3 minutes.

    Whisk in a quarter of the evaporated milk to get rid of any flour clumps.

    Add the rest of the evaporated milk and whisk for about a minute.

    Add a tablespoon of Dijon mustard and mix.

    Slowly add half of the heavy cream while whisking.

    Add half the cheese, mix until melted. Then add the remaining cheese and seasoning mix.

    Add the cooked pasta and gently mix.

    Pour half of the mac and cheese into a baking dish. Layer with remaining cheese and then the rest of the mac and cheese.

    Bake at 350 degrees for 25-30 minutes until cheese is melted and bubbly.

  • 2 cups heavy cream
  • 1 chopped chives
