Directions

    Season chicken thighs with salt and pepper.

    Sear chicken thighs skin-side down in a skillet with olive oil for 8 minutes.

    Flip chicken thighs and cook a little longer.

  4. 4.

    Remove chicken thighs from skillet.

  5. 5.

    Add onions and garlic to the skillet and cook until browned.

  6. 6.

    Add chicken broth, orange juice, meyer lemon juice, and white wine to the skillet.

    Add thyme to the skillet.

  8. 8.

    Return chicken thighs to the skillet.

    Bake uncovered at 325°F for 40 minutes until a thermometer reads 190°F.

    Remove chicken thighs from skillet and place on a platter.

    Make a slurry with cornstarch and water.

  12. 12.

    Stir the slurry into the sauce in the skillet.

    Spoon sauce onto a plate, top with chicken thigh, arugula, and bread.
