    Peel and dice potatoes and onion.

    Cut sausage into small pieces.

    Heat oil and butter in a large skillet.

    Fry sausage until browned and remove from pan.

    Toss in diced potatoes and onions.

    Add a splash of water and cover to steam for 8-10 minutes.

    Once potatoes are tender, toss everything together and season with salt and pepper.

    Add the browned sausage back in.

    Split the mix into four containers and refrigerate.

    In the morning, crack two eggs into a bowl with one container of the mix.

    Microwave in 30 second bursts until eggs are cooked (about 90 seconds total).

    Sprinkle shredded cheese and finish with salsa or hot sauce.
