Directions

    Add diced peppers, onions, and potatoes to a sheet pan. Season with salt, pepper, and olive oil. Bake at 450°F for ~30 minutes, or until softened/browned.

    Once veggies are done, add lean protein source (beef or turkey) on top. Season and bake for 5 minutes until browned.

    Pour over a blended mixture of eggs, egg whites, and cottage cheese. Top with cheddar cheese. Bake at 400°F for 25-30 minutes, or until the center is firm and edges are crisp.

    Let sit for 10 minutes before slicing into ten equally sized rectangles.

    Add a burrito-sized portion to a tortilla with sauce and cilantro. Roll and enjoy!
