Directions

    Chop chorizo in a food processor.

    In a pan, add chopped chorizo, vegetable oil and paprika and cook until fragrant.

    In a bowl, whisk an egg yolk and the juice of half a lemon.

    Add the cooked chorizo mix to the egg yolk and mix well.

    Cook bacon until crispy, then add maple syrup.

    Season scallops with salt and pepper, then pan-fry until golden.

    Toast the brioche bun.

    Fry eggs.

    Assemble the bap by layering the chorizo mixture, scallops, bacon, and a fried egg on a toasted brioche bun.

    Sprinkle with chives and top with the other half of the bun.
