Directions

    Sauté finely chopped yellow onions, jalapeños, and garlic in olive oil for 2-3 minutes.

    Add chopped Roma tomatoes and fava beans.

    Season with cumin, salt, pepper, and a little water.

    Cover and simmer for 10-12 minutes.

    Mash everything using a masher.

    Add fresh lemon juice.

    Transfer to a bowl.

    Drizzle generously with olive oil, sprinkle with fresh parsley and paprika.

    Serve with toasted pita bread, fresh vegetables (onions, cucumbers, tomatoes), or raw white onion.
