1Add three eggs and 120g of fat free cottage cheese to a blender. Blend until smooth.
2In a bowl, add 80g of plain flour, 30g of vanilla protein powder, 15g of 0 calorie sweetener, and 1 tsp of baking powder. Stir to remove lumps.
3Add the blended mixture to the dry ingredients and gently combine without overmixing to form the batter.
4Lightly grease a pan, add the pancake batter, place a lid on top, and cook for about two minutes or until you see bubbles. Then flip, replace the lid, and cook for another two minutes.
5Repeat for five pancakes. Make more for meal prep.
