Directions

    Hand grate one white onion, keeping the juice for moisture, and set aside.

    Dice 1/2 bunch of parsley and set aside.

    In a large bowl, combine 2 lbs of ground lamb, grated onion, and chopped parsley.

    Add 1/2 tsp each of cumin, coriander powder, paprika, allspice, chili powder, salt, and pepper.

    Add 1 tbsp of mashed garlic.

  6. 6.

    Mix until everything is incorporated.

    Steam pitas until soft, then cut in half.

    Stuff each pita with the lamb mixture.

    Brush each stuffed pita with olive oil.

    Heat olive oil in a hot cast iron skillet.

    Place each pita face down in the skillet until a nice crust forms.

    Flip and cook on each side until done.
