1Slice red onions thinly and fry them in oil until golden brown and crispy.
2In a bowl, marinate chicken with salt, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala, yogurt, cilantro, mint leaves, and fried onions.
3Mix the chicken until well coated.
4Bring water to a boil in a large pot, add bay leaves, a cinnamon stick, and cardamom pods.
5Add rice to the boiling water and cook until tender but not mushy. Drain the rice.
6Add the marinated chicken to the large pot, add some water, and bring to a simmer.
7Add the cooked rice to the chicken mixture, stir gently.
8Sprinkle yellow food coloring, fried onions, ghee, and cilantro on top of the rice.
9Cover the pot with aluminum foil and a lid, and cook on low heat until the rice is fully cooked and the flavors have melded.
