Directions

    Chop up and brown 1 pound of Italian sausage.

    Set sausage aside.

    Add a heavy dose of olive oil to the pot.

    Add 1 diced yellow onion and cook for 5 minutes.

    Add 6 cloves of minced garlic.

    Add 2 tablespoons of tomato paste.

    Add 28 ounces of tomatoes.

    Gently break up the tomatoes.

    Add 7 cups of chicken broth.

    Add 2 teaspoons each of parsley, oregano, and basil.

    Add Italian blend and red pepper flakes.

    Add the cooked sausage back to the pot. Season with salt and pepper to taste.

    Add 1/4 cup of heavy cream and bring to a boil.

    Add 16 ounces of pasta.

    Reduce heat to medium-low and let simmer for 15 minutes.

    In a separate bowl, mix 1 cup ricotta, 1 cup mozzarella, and 1/2 cup parmesan cheese.

    Ladle soup into bowls and top with cheese mixture and fresh basil.
