Easy Italian Sausage and Potato Soup
Directions
- 1Dice one onion.
- 2Cut some baby red potatoes and a couple handfuls of fresh spinach.
- 3Heat some olive oil in a large pot.
- 4Brown 1 lb of Italian sausage until no longer pink.
- 5Add in diced onions and potatoes along with garlic and seasonings.
- 6Add one can of diced tomatoes and 4 to 6 cups of chicken broth.
- 7Bring everything to a boil and simmer until the potatoes are cooked through.
- 8Stir in chopped spinach and half a cup of heavy whipping cream until heated through.
- 9Serve and top with grated parmesan cheese.
