Directions

    Dice one onion.

    Cut some baby red potatoes and a couple handfuls of fresh spinach.

    Heat some olive oil in a large pot.

    Brown 1 lb of Italian sausage until no longer pink.

    Add in diced onions and potatoes along with garlic and seasonings.

    Add one can of diced tomatoes and 4 to 6 cups of chicken broth.

    Bring everything to a boil and simmer until the potatoes are cooked through.

    Stir in chopped spinach and half a cup of heavy whipping cream until heated through.

    Serve and top with grated parmesan cheese.
