    Lightly whisk 16 ounces of good quality mascarpone cheese until creamy.

    In a separate bowl, take ¾ cups of sugar and 4 egg yolks; place on a double boiler and whisk for exactly 2 minutes.

    Add in the mascarpone cheese, a teaspoon of vanilla and a pinch of salt and whisk until just combined.

    Replace the egg whites with 1 ½ cups of cold heavy cream and whisk until it reaches stiff peaks.

    Add the whipped cream into the mascarpone mixture in two to three additions and gently fold until combined.

    Make about 1 ½ cups of strong coffee.

    Give the ladyfingers a quick dip in the coffee.

    Spread half of the mascarpone cream over the ladyfingers in a baking dish.

    Add another layer of ladyfingers, spread on the remaining mascarpone cream and refrigerate until fully set.
