    Heat a griddle over medium-high heat. Add 1 lb of ground beef and 1 chopped onion.

    Season with 1/2 tsp salt, 1/2 tsp pepper, 1/4 tsp cayenne, 2 tsp chili powder, 1 tsp cumin, and 1 tsp dried cilantro.

    Cook the beef until browned, then drain the grease.

    Add a 16 oz can of refried beans and stir to combine.

    Add some oil to another part of the griddle. Lay out the tortillas and top them with shredded cheddar cheese.

    Top each tortilla with a spoonful of the beef and bean mixture. Fold in half.

    Cook the tacos on both sides until golden brown and crispy. Add oil as needed and work in batches.

    Serve with pico de gallo, sour cream, and cilantro, if desired.
