Garlic-Herb Cabbage Rounds with Lemon-Pistachio-Parmesan Crumble

Directions

    Preheat oven to 425°F (220°C).

    In a small bowl, combine melted butter, olive oil, thyme, garlic, salt, and pepper. Mix well.

    Cut the cabbage into 3/4-inch thick rounds.

    Drizzle olive oil on a sheet pan and arrange cabbage rounds on it.

    Brush the butter mixture over the cabbage rounds.

    Roast in the preheated oven for 40-50 minutes until tender.

    Optionally broil for 1-2 minutes to brown the tops.

    While cabbage roasts, chop pistachios, Parmesan, and arugula on a cutting board.

    Mix the chopped ingredients with lemon zest, salt and pepper to create a crumble.

    Plate the roasted cabbage rounds and top with the crumble.

  • 1 honey
